Meatless Monday Recipe: Sunflower-Walnut Paté with Cucumber

Sunflower-Walnut Pate with cucumber & dill sprig on pumpernickle bread

INGREDIENTS

  • 1 ½ c sunflower seeds, soaked

  • 2 ¼ c walnuts, soaked

  • 1 c cooked lentils

  • 1 clove garlic

  • 1 tbsp shallot, diced

  • 1⁄2 c fresh dill, minced

  • 1 lemon, juiced

  • 1 tbsp tamari

  • Sea salt, to taste

  • Toasted bread, cut into bite-sized slices

  • 1/2 cucumber, sliced

INSTRUCTIONS

1. Soak walnuts & seeds overnight OR for half an hour in warm water.

2. Pulse all ingredients except cucumber & bread in a food processor until a spreadable mixture forms.

3. Spread paté on toasted bread, top with cucumber slice & fresh sprig of dill if desired.
