Meatless Monday Recipe: Balsamic Onion Jam

Have you tried savory jams before? If not, allow us to expand your palette!


This week's Meatless Monday recipe is bringing you a balsamic onion jam. Not quite your usual jam or spread, but it is sure to be your new usual! You can enjoy this on toast, dip some crackers into it, or add it to your favorite charcuterie spread. It's easy to make, and it packs a tasteful punch.

INGREDIENTS

  • 2 TBS olive oil

  • 2 large onions, sliced

  • 1 tbs sugar

  • ¼ tsp salt

  • 1 tsp chopped rosemary or thyme

  • 2 TBSbalsamic vinegar


INSTRUCTIONS

  1. In non-stick skillet heat oil over medium-high heat. Add onions, sugar, salt and herbs.

  2. Begin to caramelize onions, stirring constantly until all onions have color. Then, reduce heat to medium-low and let onions cook until completely tender.

  3. Once onions are soft, add balsamic vinegar and cook for 1-2 minutes until liquid is evaporated. Let cool.
